UFFDA Chicken Parmesan

Ingredients

  • 4 chicken breasts (can use thighs too)

  • UFFDA Shake

  • 1 cup Italian bread crumbs

  • 1 cup freshly grated parmesan cheese

  • 1/4 cup olive oil

  • 1 TBS minced garlic

  • 8 ounces mozzarella cheese slices

  • 1 Jar of UFFDA Mary-Nara sauce ( see recipe)

  • Fresh Basil

  • Pasta of your choosing

  • *Cornflakes or gluten free breadcrumbs can be used for a gluten free option

Directions

  • Preheat oven to 400 degrees

  • Season Chicken with UFFDA Shake

  • Whisk 2 eggs in small bowl. Mix together breadcrumbs & 3/4 cup Parmesan cheese in another bowl

  • Heat olive oil in oven safe skillet over med heat. Add garlic and saute for 2-3 min

  • Dredge chicken in eggs and then Parmesan mixture. Add each chicken breast to oil/garlic mixture

  • Cook for 3-4 minutes each side. Remove chicken

  • Add 1/2 jar of Mary-Nara sauce to the bottom of skillet

  • Add chicken back to skillet. Top with additional sauce and mozzarella cheese, and remaining parmesan cheese

  • Bake at 400F for 35-40 minutes or until chicken is no longer pink and cheese is bubbly

  • Top with fresh basil

  • Serve over pasta

UFFDA MARY-NARA

Ingredients

Uses for UFFDA Mary-Nary

  • UFFDA Chicken Parm

  • Spaghetti Sauce

  • Pizza Sauce

  • Dipping sauce with Crusty Bread

  • 4 TBS Olive oil

  • 6 cloves of garlic, minced

  • 28 oz of tomato sauce

  • 32 oz of UFFDA Juice

  • 1 6 oz can of tomato paste

  • 1 TBS Oregano

  • 1 TBS Basil

  • 1/2 TSP sugar

  • 1/2 TSP onion powder

Directions

  • Add oil and garlic to saucepan and saute until fragrant, 2-3 minutes

  • Add garlic and all other ingredients to crockpot cook on low heat for 4-6 hrs
